Menu... what day is it?

I know it isn't a Menu Monday, but for a moment I really couldn't remember if today was Wednesday or Thursday! Oh dear...

Anyway, the last few weeks have been fairly slow in our kitchen. Lots of late nights for Kelly at work, some eating out, and some tasty dinners with friends and family. Like, my Grandma's meatloaf, baked potatoes, creamed corn and green salad. If my Grandma had a cookbook I'm pretty sure it would be a best seller, but I'm not biased or anything.
Monday, I went out with friends to The Old Spaghetti Factory, love me some mizithra cheese!
The above picture is what I've been enjoying for breakfast:
Diced Apple
Craisins
Almonds (Trader Joe's has awesome roasted but not salted almonds, my fav)
Yogurt (this pic was with peach yogurt, but I think it tastes best with vanilla).

Below, is a very simple dinner. Bratwurst and steamed Green Beans with pepper and kosher salt. When I took this picture I said "eww, it looks gross." To which Kelly replied, "you made it."

A note on the green beans, they are from Costco. I bought a 5 lb bag of frozen Organic green beans for under $5.00!
Other dinners include Chicken Fajitas and an oldie but a goodie Tator Tot Casserole.

I grew up eating Tator Tot Casserole, and it quickly became a favorite of Kelly's. Just about everyone in my family makes it, and we all make it differently, here is my take on it:
Tator Tots (one bag, I'm not sure on the oz)
Ground Turkey (I use one of the pre packaged servings, I think it is about 1.5 lbs)
1 can of whole kernel corn (drained)
2 cans of cream of mushroom soup (I've tried it with the garlic kind and it was a bit much)
garlic, salt, pepper, chili powder to taste
Shredded Cheddar Cheese (enough to cover the top of the casserole)

Brown/cook up the turkey with garlic, salt, pepper and chili powder to your taste.
In a medium bowl mix together cream of mushroom soup, corn and cooked turkey.
Spread mixture into 9x12 pan.
Top with Tator Tots.

Cook on 375 degrees uncovered for 25-30 minutes or until tots are cooked.
Sprinkle with cheddar and cook an additional 5 minutes, or until cheese is melted.
Let sit for a couple of minutes to set, and then enjoy!
I usually serve it with steamed broccoli or a green salad. My Mom always served it with corn (she doesn't cook it in the casserole), a green salad and apple sauce.

ps *** my Grandma and Aunt Michelle put milk in their casseroles, 1-2 cans... I am going to have to try that***

I am totally going to make that Tator Tot dish! Yum!

We had homemade Mac&Cheese last night, which was baked with a thick layer of cheese on the top. Not great for my lactose issue, but awesome for my family! :) It would have gone great with the frozen organic green beans you bought at Costco... I'll have to keep my eye out for those!

oh my dear...I love me some mizithra cheese too!!! I think TOSF actually has it mixed with another cheese...I can't remember what the other cheese is. Either way, I think I could live off of that stuff! =)
